Zucchini Cakes

Here's a great little side dish that I tried for dinner last night. We ate it with Antipasto Squares and salad but it would be great with grilled chicken or pretty much anything!

1 1/2 cups grated zucchini (about 1 large zucchini)
1 egg, beaten
2 T flour
1/2 cup finely minced onion
1 cup breadcrumbs
1/4 cup grated parmesan
greek seasoning, salt, pepper

Mix all ingredients and heat a skillet with 3 T oil over med-high heat.
Drop zucchini mixture by tablespoons into skillet. (I made little patties)
Turn and brown on both sides and drain on paper towels.

I served them with a little marinara and parmesan on top and they were delicious!

Growth Chart

5 Months!!! Such a big girl :)

I think its hilarious that everything seems to be growing...except for her hair!! Poor Rose gets more bald with each passing month. I hope it will start growing back soon!

5 Months!



Our little Rosebud turned 5 months on the 12th. My how time flies! It's been an amazing 5 months at the Lyon household. Rose's little personality has come out and we just love seeing her change every day. She smiles ALL THE TIME, laughs sometimes (she is ticklish!), and hardly ever cries (except when Mommy leaves!) I took Rose to get her 2nd shot today and she weighs 17 lb 2 ounces.

Here are some fun facts about Rose at 5 months:
*Loves smiling at her reflection in the mirror
*Loves, loves, loves mealtime! She eats rice cereal mixed with pears and a veggie for dinner. So far she has liked everything we have given her. That includes pears, carrots, sweet potatoes, avocado, squash, and green peas and banana. I stocked the freezer with homemade organic baby food that was incredibly easy to make and tastes sooo much better than commercial baby food.
*Loves nursing and is not so crazy about bottles. Won't drink a bit of formula. Uh oh. Gotta work on that.
*Still loves bathtime.
*Loves sucking on her washcloth in the bathtub.
*Speaking of sucking, Rose is OBSESSED with sucking her fingers. Not just one, but two! The pointer and birdie.
*Grabs everything in sight.
*Loves holding her left foot. She doesn't show much interest in the right one. Maybe she doesn't know its there yet?
*Still hasn't rolled over (Remember when she rolled from tummy to back at 2 months? Well, it never happened again! I'm still waiting for my little chunky monkey to get movin!)
*Enjoys hanging around in her Johnny Jump Up. Hasn't really figured out how to jump yet.
*Tries to sit up...doesn't like laying down in my arms...that's for babies!
*Really wants to get her hands on Lucy! Lucy is still a little scared of this new thing we brought home a few months ago and won't get close enough for Rose to get a good grip. I know that once Rose is eating finger foods, she will be LuLu's BFF. Lucy is our furry dust buster.
*Sleeps on her tummy for all naps and bedtime. We finally got rid of the swaddler!! Whew...I thought I was going to have to swaddle her until she was 16.
*Scoots across her crib at night! I start her at one end of the bed and when I peek at her in the morning, she is at the other end! How does she do that?
*Takes 2 good naps a day.
*Loves catching a glimpse of TV...usually something like Kathy and Hoda, Food TV, or the Housewives...Mommy's favorite guilty pleasures :)


Ok, I could go on forever but I think I'll stop here! Overall, Rose is a tremendous joy and we love every minute with our little girl. Can't wait to see what this month has in store for us :)

A Typical Day

Recently, Rose and I have tried to establish some sort of a schedule. Since I'm not a schedule type of person, its been hard to stick to it but I can see that on the days we adhere to it, things go a little more smoothly!

6:00-7:00 Rose wakes up and nurses, plays for about an hour while I start laundry, unload the dishwasher, make coffee (decaf, of course!)

8:00 nap time, I continue chores and have a little "ME" time

11:00 Rose wakes up and nurses, we run errands, meet a friend for lunch, go walking, etc...Rose usually catches a cat nap or two while we are out

2:00 Rose nurses again and goes down for her afternoon nap
2:00-4:00ish Nap time for Rose, I finish laundry, take a shower, start working on dinner, etc...

4:00 Rose wakes up and plays while I cook dinner
5:00 Time to nurse again

6:30 Rose eats dinner...rice cereal mixed with pears and a veggie (so far we've just had carrots)
7:00 Clark and I eat dinner while Rose plays
8:00 Bathtime

8:30 Nurse
9:00 Time for bed! It's been a long but wonderful day!
